To change your dice skin in Baldur's Gate 3, you first need to face a roll. You can't change it through the options whenever you want. Instead, you need to find (or force) a die roll to find the button needed to make the change.
Once you're prompted to roll the dice, stop and look for a little button in the bottom left corner of the screen. Click it. From here, you'll be able to change your Baldur's Gate 3 dice skin.
Can you change die skins individually in Baldur's Gate 3?
Sadly, no. No matter whether you're rolling one, two, or ten die at once, you'll only be able to choose one dice skin that will apply to them all at the same time.
